Ingredients:
1 (4.5 oz.) pkg. John Wm. Macy's Melting Romano CheeseCrisps, crushed
4 eggs, beaten
1 cup milk
2 cups small curd cottage cheese
1 cup crumbled Feta cheese
1/2 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
3 cups chopped fresh spinach
2 tablespoons chopped fresh basil leaves
1/4 cup minced red onion
1/4 teaspoon minced garlic
1/2 cup diced Kalamata olives
Garnish:
16 John Wm. Macy's Melting Parmesan CheeseSticks
8 basil sprigs
Instructions:
Heat oven to 400 degrees. Grease a 9 ½-inch quiche pan. Sprinkle crushed CheeseCrisps evenly in bottom. Set aside. In a large mixing bowl, beat next eight ingredients on low speed until well mixed. Gently stir in remaining ingredients. Spoon evenly over crushed CheeseCrisps. Bake for 45-50 minutes until set. Cool for 15 minutes before slicing. To serve, slice into 8 slices. Place each slice on a serving plate and arrange 2 CheeseSticks and a basil sprig on each. Serve immediately.
