Parmesan Crusted Salmon Patties



Ingredients:

2 cups John Wm Macy's Parmesan CheeseSticks, rough grated
1 small zucchini
1 small carrot
1 can (15 oz.) salmon, drained and flaked
1 teaspoon grated onion
1/4 teaspoon salt
1/8 teaspoon black pepper
1 egg
2 tablespoons vegetable oil
3 tablespoons mayonnaise
1 teaspoon mustard

Instructions:

1. Finely shred zucchini and carrot. In medium bowl, mix zucchini, carrot, salmon, Macy's CheeseSticks, onion, salt, pepper and egg. Shape into patties.
2. Saute in hot oil until browned on both sides.
3. Stir together mayonnaise and mustard and serve.
