3 Delicious Soup Secrets From John Wm. Macy's Family Bakery

A cold and damp day calls for the big guns – or the hot ones. Soup! Kick it up a notch by changing out the crackers or bread for some John Wm. Macy's CheeseSticks. They are great for dipping and are also good for soaking up the broth, plus they'll add another layer of flavor to lunch or dinner.

French Onion Soup

This soup requires caramelized onions to really make the flavor pop. You could always make one of those simple, fast recipes, but you'll just get a ho-hum from your taste buds. Check out this recipe to make your taste buds happy.  

Caramelized Onions

- 5 onions, sliced about ¼ inch thick*
- tablespoon butter
- 1 tablespoon lard or bacon fat
- Salt
- Red wine
- 3 heaping tablespoons flour

Instructions

Melt the butter and fat in a cast iron pan over medium heat. Add the onions and a pinch of salt. Lower the heat to a medium-low temperature. Cook the onions for 15 to 20 minutes, stirring every 4 to 5 minutes. Add a splash of red wine to deglaze the pan, stirring constantly. Let the wine evaporate and cook the onions another 15 to 20 minutes, stirring every 3 to 4 minutes. Repeat this process until the onions have a dark, rich color, making sure to scrape the bottom of the pan. You don't want the onions to burn, so be sure to keep a close eye on them. The process will take from 1 to 1 ½ hours. When they're finished, deglaze the pan one more time with a splash of wine and cook until the wine evaporates. Add the flour to the onions and cook on medium-low for about 10 minutes, stirring constantly.

Make the Soup

- 2 bay leaves
- 2 fresh thyme springs
- 2 quarts of beef broth
- 1 box John Wm. Macy's Garlic and Romano CheeseSticks
- Gruyere cheese 

If the cast iron pan is large enough, make the soup in that pan. If not, transfer the onions to a stock pot. Add 2 bay leaves, 2 fresh thyme sprigs and 2 quarts of beef broth. Bring the soup to a simmer and cook it for 10 minutes. Remove the bay leaves and the thyme sprigs. Season to taste with salt and pepper.

Set the oven to broil. Pour the soup into oven-safe soup bowls. Place the bowls on a sturdy cookie sheet. Break some John Wm. Macy's Garlic and Romano CheeseSticks into pieces that fit across the top of the bowls. Layer Gruyere cheese over the top of the CheeseSticks. Broil until the cheese melts. Serve hot, but give plenty of warning that the soup bowls will be hot!

Beef Vegetable Soup

Enjoy your favorite beef vegetable soup/stew for a fast lunch, you can even include some John Wm. Macy's Cheddar & Scallion CheeseSticks on the side too. If you only have a little time, but still want homemade, you can make a fast and easy beef vegetable soup.

- A tender cut of beef
- 8 cups of water
- 2 beef bullion cubes
- 1 bag of frozen mixed vegetables
- Salt
- Pepper
- Garlic
- Liquid smoke
- Worcestershire sauce
- 2 tablespoons of cornstarch
- 2 tablespoons of cold water 

Braise a tender cut of beef in a stock pot. Add 8 cups of water and 2 beef bullion cubes. Add 1 bag of frozen mixed vegetables, salt and pepper to taste, garlic to taste, few drops of liquid smoke and a few drops of Worcestershire sauce. Simmer until the beef is done. For a thicker broth, mix 2 tablespoon cornstarch with 2 tablespoons cold water. Add to the beef soup, stirring constantly. Let the soup simmer until the broth starts to thicken. Then serve and enjoy!

Creamy Potato Soup

This easy potato soup is made in a slow cooker, so it's perfect for those lazy days when you don't want to do much.

- 2 cups mashed potatoes
- 28 ounces chicken broth
- 1 can cream of chicken soup
- ½ cup chopped onion
- Black pepper to taste
- 1 8-ounce package of cream cheese, softened
- 1 box John Wm. Macy's Dijon Swiss CheeseSticks

Toppings:
      shredded cheese, sliced green onions, bacon

Instructions

Combine the potatoes, soup, chicken broth, onion and pepper in a slow cooker. Cover and cook the mixture on low for 5 to 6 hours. When the potatoes fall apart, the soup is ready for the next step.

Add the cream cheese and cook for 30 minutes, stirring every 5 to 6 minutes until the cream cheese is combined.

Serve topped with toppings and John Wm. Macy's CheeseSticks on the side.
