Wine Pairings and Canapé Recipes

Original Cheddar: Merlot, Cabernet Sauvignon, Shiraz, Malbec, Red Burgundy, Shiraz

Asiago & Cheddar: Zinfandel, Shiraz, Merlot, Pinot Grigio

Malbec: Key descriptors used when talking about Malbec include plum, raspberry, fig, and spice. If you head to Mendoza, Argentina be prepared to consume plenty of Malbec and steak as it’s the perfect pairing to beef and lamb cuisine.

Tempranillo: It’s a dark grape with plum, berries, leather, tobacco and herb notes. This varietal pairs well with distinct distinct cheeses, charcuterie, sausage, risotto and rice dishes like Paella.

Zinfandel: This wine pairs well with simple foods like burgers, pizza, Mexican or Thai foods, sweet barbecue sauces, sausages, turkey tomatoes and stinky cheeses.

Shiraz: The Syrah grape possesses the most antioxidants of all the popular winegrape varietals and has a distinct flavor profile of pepper, vanilla, blackberry and spice with a velvety finish. Syrah stands up to very heavy meats, beef, barbecue, lamb, duck, venison, sausage, and tuna.

Pinot Noir: Mushrooms and Goat Cheese both seem to have a special affinity for Pinot Noir, whether from Burgundy, Napa, Sonoma or Oregon.

Merlot: Merlot is a medium-bodied wine, lighter and softer than Cabernet, yet still full-flavored. Merlot pairs easily with roasted prime rib, grilled steaks, filet mignon, cheese (especially full-flavored cheddar, blue, camembert, etc.), duck, lamb, pork, veal, turkey, sausage, pasta and tomato sauce dishes.

Pinot Grigio: Pinot Grigio pairs well with harder, stronger cheeses such as parmesan, asiago pasta dishes, as well as white meats including pork chops, chicken dishes.

Muscat: When produced as a dry white wine, Muscat is high in acidity with orange blossoms, lemon-lime, grapefruit and citron in the nose, but on the palate it is crisp, tart, dry and refreshing. Dry muscat is a perfect aperitif or cheese wine.

accompany the most popular cocktails.  Of course, like with our delicious snacks, why not
create your own special creations?  Let us know what you come up with.

Sweet and Savory with a Crunch

1 box Sesame Gruyere CheeseCrisps
1/2 lb. brie
Small jar peach preserves
Fresh mint leaves

Top each CheeseCrisp with a small slice of brie; Spoon 1/2 teaspoon of preserves on top of brie; Top with a small piece of mint leaf.

Gorgonzola and Pear CheeseCrisp

1 box Sesame Gruyère CheeseCrisps
1/2 lb. chopped walnuts
3 fresh pears
1 lb. Gorgonzola
1/2 red onion, finely chopped

Toast the walnuts in a pan; mix in a bowl with the Gorgonzola. Spread onto the CheeseCrisp and sprinkle on a few pieces of red onion; top with a thin slice of pear.

Canapes of Smoked Salmon and Caviar

1 box Sesame Gruyère CheeseCrisps
1/2 lb. thinly sliced smoked salmon
1/4 cup creme fraiche
Caviar as needed
Chives chopped into 1/2” pieces

Cut smoked salmon into thin strips and place 2 across CheeseCrisp; place dollop of creme fraiche on top with a depression in the middle for caviar; fill center with caviar; garnish with chives.

Cream Cheese and Olive Canapé

1 box Garlic Parmesan CheeseCrisps
6 oz. cream cheese
1 cup stuffed olives (2 ½ to 3 oz.)
1/2 cup mayonnaise
2 teaspoons prepared mustard

Place all ingredients in a processor bowl and whirl a few times. Chill for an hour, then spread on CheeseCrisps and serve.
